  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 small onion
  • 2 cloves garlic
  • 1/2 cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • freshly ground black pepper to taste
  • 1/2 teaspoon dried Italian seasoning optional
  • Fresh basil optional, for garnish

Preparation

  • Pat the chicken cutlets dry with paper towels and season both sides generously with salt and pepper.

Cooking

  • Heat olive oil in a large skillet over medium-high heat, then sear the chicken for 3-5 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  • Reduce heat to medium, add chopped onion and cook for 3-4 minutes until softened, then stir in minced garlic and sun-dried tomatoes for another minute.
  • Pour in chicken broth, scraping up any browned bits, and simmer for 2-3 minutes to reduce slightly.
  • Stir in heavy cream and Italian seasoning, bringing the sauce to a gentle simmer.
  • Add fresh spinach, stirring until it wilts, then stir in grated Parmesan cheese until melted and the sauce is smooth.
  • Return the cooked chicken to the skillet, nestling it into the sauce, and simmer for 1-2 minutes to heat through. Garnish with fresh basil if desired and serve hot.

This dish can be served with pasta, rice, or a side of crusty bread to soak up the delicious sauce.
