  • 1 can diced green chiles, drained 4-ounce
  • 1/4 cup chopped fresh cilantro
  • 1 lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Freshly ground black pepper to taste

  • Thaw and drain frozen corn, or blanch fresh corn for 1-2 minutes, then drain and cool.
  • Ensure cream cheese is at room temperature for a smooth dip.

Mixing

  • In a large bowl, combine softened cream cheese, sour cream, and mayonnaise, mixing until smooth.
  • Stir in thawed corn, red onion, bell pepper, drained green chiles, and fresh cilantro.
  • Add lime juice, chili powder, garlic powder, and optional shredded cheese. Gently fold all ingredients until evenly distributed.

Final Steps

  • Taste and adjust seasoning with salt and black pepper.
  • Cover and refrigerate for at least 1 hour to allow flavors to meld and dip to firm up.
  • Stir well before serving with chips or vegetable sticks.

Notes

For an extra kick, add a pinch of cayenne pepper or a dash of your favorite hot sauce. This dip is also delicious as a topping for tacos or quesadillas.
