  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • large egg lightly beaten
  • 2 tablespoons all-purpose flour plus more for dusting
  • 2 tablespoons finely chopped green onions
  • 0.5 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2-3 cups vegetable oil for frying, optional

Preparation

  • In a large bowl, combine mashed potatoes, cheddar cheese, beaten egg, flour, green onions, garlic powder, salt, and pepper. Mix until well combined and firm.
  • Lightly flour your hands, then roll small spoonfuls of the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  • Chill the potato balls in the refrigerator for at least 30 minutes to help them firm up.

Cooking Methods

  • For baking, preheat oven to 400°F (200°C). Arrange chilled balls on a baking sheet and bake for 20-25 minutes, flipping halfway, until golden and crispy.
  • For frying, heat 2-3 inches of vegetable oil to 350°F (175°C). Carefully drop a few balls into the hot oil and fry for 3-5 minutes, turning occasionally, until golden and crispy. Remove and drain on paper towels.

Serving

  • Transfer the hot puffs to a serving platter and enjoy immediately.

Notes

Chilling the potato balls before cooking is essential for maintaining their shape and achieving the best texture. You can also prepare these in advance and refrigerate them until ready to cook.
