  • 4 boneless, skinless chicken breasts
  • 1/2 cup dill pickle juice
  • 1 cup all-purpose flour
  • 1/2 cup Parmesan cheese grated
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1/4 cup dill pickles finely chopped
  • 2 tbsp vegetable oil or other high-heat oil

Preparation

  • Pound chicken breasts to an even thickness (about 1/2 inch) between two pieces of plastic wrap.
  • Marinate the chicken in dill pickle juice in a shallow dish for at least 30 minutes, or up to 2 hours in the refrigerator.

Breading

  • Whisk together flour, grated Parmesan cheese, paprika, garlic powder, onion powder, salt, and pepper in a shallow dish for the breading mixture.
  • In another shallow dish, whisk the eggs.
  • Remove chicken from the pickle juice, letting excess drip off, then dredge each breast in the flour mixture, followed by the egg, and then back into the flour mixture, pressing firmly to ensure a good coating.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat until shimmering. Carefully place the breaded chicken breasts in the hot oil.
  • Cook for 4-6 minutes per side, or until golden brown and cooked through (internal temperature of 165°F or 74°C). Work in batches if necessary to avoid overcrowding the pan.
  • Remove chicken from skillet and place on a wire rack to drain excess oil and keep it crispy.

Serving

  • Garnish with finely chopped dill pickles and serve hot.

Notes

For extra crispiness, ensure the oil is hot enough before adding the chicken. Do not overcrowd the pan, as this can lower the oil temperature and lead to soggy chicken. You can adjust the amount of dill pickle juice for marinating based on your preference for a stronger pickle flavor.
