  • 4-6 bone-in, skin-on chicken thighs
  • 1 tablespoon extra virgin olive oil

Seasoning Blend

  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika sweet or smoked
  • 1 teaspoon dried herbs rosemary, thyme, or oregano

Optional Garnishes

  • 1 lemon for squeezing
  • fresh parsley for garnish

Instructions
 

Preparation

  • Pat the chicken thighs dry with paper towels to remove excess moisture.
  • In a small bowl, mix salt, pepper, garlic powder, paprika, and dried herbs. Season both sides of the chicken thighs generously, ensuring some seasoning gets under the skin.
  • Let the seasoned chicken sit at room temperature for 15-20 minutes while the oven preheats.

Cooking

  • Preheat your oven to 400°F (200°C) and place an oven-safe skillet over medium-high heat on your stovetop.
  • Add olive oil to the hot skillet, then carefully place chicken thighs skin-side down. Sear for 5-7 minutes until the skin is deeply golden brown and starting to crisp, do not disturb the chicken during this time.
  • Flip the chicken thighs over so they are skin-side up and immediately transfer the skillet to the preheated oven.
  • Roast for 20-25 minutes, or until the internal temperature reaches 175°F (80°C).

Resting and Serving

  • Remove the skillet from the oven and loosely tent the chicken with foil.
  • Let the chicken rest for 5-10 minutes before serving. Squeeze fresh lemon juice over the top and garnish with fresh parsley if desired.

Notes

For extra crispy skin, ensure the chicken thighs are thoroughly dry before seasoning and searing. Adjust the amount of seasoning to your preference.
