  • 1.5 - 2 lbs boneless, skinless chicken breasts or thighs
  • 2 cans Great Northern beans (or cannellini beans) undrained

  • Place the undrained cans of Great Northern beans directly into the bottom of your slow cooker.
  • Lay the chicken breasts or thighs directly on top of the beans.
  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is very tender.
  • Carefully remove the chicken from the slow cooker and shred it into bite-sized pieces using two forks.
  • Return the shredded chicken to the slow cooker and stir everything together until combined.
  • Ladle warm into bowls and serve with your favorite toppings.
