  • 2.5-3 lbs Boneless, Skinless Chicken Breasts
  • 8 cups Chicken Broth low sodium
  • 2 10.5 oz cans Cream of Chicken Soup
  • 1 cup Milk whole or 2%
  • 4 stalks Celery chopped
  • 4 large Carrots chopped
  • 1 large Yellow Onion chopped
  • 3 large Potatoes peeled and diced (Russets or Yukon Golds)

Seasonings

  • 2 tsp Garlic Powder
  • 1 tsp Dried Thyme
  • 1 tsp Salt adjustable
  • 0.5 tsp Black Pepper

Garnish (Optional)

  • Fresh Parsley chopped (for garnish, optional)

Instructions
 

Preparation

  • Chop celery, carrots, and onion; dice peeled potatoes evenly for consistent cooking.

Cooking

  • Place chicken breasts in the slow cooker, then scatter chopped celery, carrots, and onion over them.
  • Sprinkle garlic powder, dried thyme, salt, and black pepper over the vegetables and chicken.
  • Pour 8 cups of chicken broth over all the ingredients in the crockpot.
  • Cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and vegetables are soft.
  • Remove and shred the cooked chicken into bite-sized pieces using two forks.
  • Return shredded chicken to the crockpot, then add diced potatoes, cream of chicken soup, and milk, stirring well.
  • Re-cover and cook on high for an additional 30-60 minutes until potatoes are tender and the soup is fully heated and creamy.

Serving

  • Taste the soup and adjust seasonings like salt and pepper as needed.
  • Ladle into bowls and garnish with fresh chopped parsley if desired.

Notes

For a thicker soup, you can mash some of the cooked potatoes against the side of the pot before serving. If you prefer a less creamy soup, you can reduce the amount of cream of chicken soup or milk. This soup freezes well for future meals.
