  • 1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 cup low-sodium chicken broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil, chopped for garnish
  • Salt and black pepper to taste

  • Season chicken with salt and pepper, then sear in olive oil in a skillet for 2-3 minutes per side until lightly browned to enhance flavor.
  • Transfer seared chicken to the crockpot and add garlic, red bell pepper, sun-dried tomatoes, chicken broth, Italian seasoning, oregano, and red pepper flakes.
  • Cook on low for 3-4 hours or on high for 2-3 hours until chicken is thoroughly cooked and easily shreddable.
  • Remove chicken, shred it with two forks, and return it to the crockpot.
  • Stir in heavy cream and Parmesan cheese, then cook on high for 15-20 minutes until the sauce thickens and cheese melts.
  • Adjust seasoning as needed and garnish with fresh chopped basil before serving.

Notes

For best results, do not skip searing the chicken; it adds a significant depth of flavor. If you prefer a richer sauce, increase the amount of heavy cream. This dish pairs wonderfully with pasta, rice, or mashed potatoes.
