Instructions
 

Preparation

  • Wash and peel the cucumbers and carrots.
  • Cut the cucumbers into thin slices and the carrots into julienne strips.
  • In a large bowl, combine the cucumbers and carrots.

Dressing

  • In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  • Pour the dressing over the salad and toss to combine.

Notes
