Wet Ingredients

  • 2 very ripe medium bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 1/4 cup natural almond butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Dry Ingredients

  • 1 ½ cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda

Add-in

  • 1/2 cup sugar-free chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mixing

  • Combine the mashed bananas, applesauce, almond butter, vanilla, cinnamon, and salt in a large bowl and mix well.
  • Whisk together the oats, flour, and baking soda in a separate medium bowl.
  • Gradually add the dry mixture to the wet mixture, mixing until just combined without overmixing.
  • Fold in the sugar-free chocolate chips.

Baking

  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes until the edges are golden brown and the cookies are set.

Cooling

  • Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

For a gluten-free option, ensure you use gluten-free rolled oats and almond flour instead of whole wheat flour. Store cookies in an airtight container at room temperature for up to 3-4 days, or freeze for longer storage.
