  • 3 large large egg whites at room temperature
  • 0.5 teaspoon cream of tartar
  • 0.25 teaspoon salt
  • 1 cup granulated sugar
  • 0.5 teaspoon vanilla extract
  • 0.25 cup unsweetened cocoa powder sifted
  • 0.5 cup mini chocolate chips

Preparation

  • Preheat your oven to 225°F (107°C) and line two large baking sheets with parchment paper.
  • In a clean, dry bowl, combine egg whites, cream of tartar, and salt; beat on medium speed until soft peaks form.
  • Gradually add granulated sugar, tablespoon by tablespoon, while beating on medium-high speed; then beat on high until the meringue is stiff, glossy, and holds firm peaks.

Combining Flavors & Baking

  • Gently fold in vanilla extract, then sifted cocoa powder, and finally the mini chocolate chips until just combined.
  • Transfer the meringue to a piping bag with a star tip (or use two spoons) and pipe or spoon dollops onto the prepared baking sheets, leaving an inch between each.
  • Bake for 60 to 75 minutes, or until the cookies are firm and easily lift off the parchment paper.
  • Turn off the oven, prop the door open, and let the cookies cool completely inside the oven for at least 1 hour to ensure crispiness.
  • Once fully cooled, remove from the oven and serve.

Notes

Ensure your bowl and utensils are completely clean and free of grease when whipping egg whites for best results. For extra crispiness, allow cookies to cool in the oven overnight.
