Ingredients
  

Truffles

  • 8 oz dark chocolate good quality (60-70% cocoa), finely chopped
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1 teaspoon orange zest from one small orange
  • 1/4 teaspoon pure orange extract optional, for intense flavor

Coating

  • cocoa powder for coating
  • powdered sugar for coating
  • finely chopped nuts for coating

Instructions
 

Making the Ganache

  • Place the finely chopped dark chocolate into a medium heatproof bowl.
  • Gently heat the heavy cream and butter in a small saucepan until simmering at the edges, being careful not to boil.
  • Pour the hot cream over the chocolate and let it sit for 5 minutes to melt.
  • Add orange zest and extract, then stir gently until the mixture is smooth and glossy, forming a ganache.

Chilling and Rolling

  • Cover the bowl and refrigerate the ganache for at least 2 hours, or until firm enough to roll.
  • Once chilled, scoop portions and roll them into uniform balls.
  • Roll the truffles in your choice of cocoa powder, powdered sugar, or chopped nuts to coat them evenly.

Notes

For best results, use high-quality chocolate as it significantly impacts the final truffle flavor and texture. Experiment with different coatings like shredded coconut or finely crushed pistachios.
