Ingredients
  

Pudding Base

  • 1 scoop chocolate protein powder (about 30g, casein recommended for thickness)
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon cooled, strong brewed coffee or espresso
  • 1-2 teaspoons sweetener optional, to taste
  • 1/4 teaspoon vanilla extract
  • Pinch salt

Instructions
 

Preparation

  • Combine almond milk, cooled coffee/espresso, and vanilla extract in a medium bowl or powerful blender.
  • Add chocolate protein powder, cocoa powder, sweetener (if desired), and a pinch of salt to the mixture.
  • Whisk vigorously for 2-3 minutes or blend until smooth, lump-free, and slightly thickened to a milkshake-like consistency.

Chilling & Serving

  • Pour the pudding into a serving dish or ramekins, cover with plastic wrap, and refrigerate for 1-2 hours or overnight to set.
  • Once chilled and firm, remove from the refrigerator, add desired toppings like whipped cream and chocolate-covered coffee beans, and serve.

Notes

For best results, use casein protein powder as it helps achieve a thicker, creamier consistency. Adjust sweetness and coffee strength to your preference. This pudding is also great for meal prep; simply store in individual containers in the fridge for up to 3 days.
