Ingredients
  

Pancake Batter

  • 1.5 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 2 tablespoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 1 large egg
  • 1.25 cups milk
  • 0.25 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • Oil or butter for the griddle

Cinnamon Sugar Coating

  • 0.25 cup granulated sugar
  • 1.5 teaspoons ground cinnamon

Instructions
 

Prepare Batter

  • In a large bowl, whisk together the flour, ¼ cup granulated sugar, baking powder, baking soda, 1 teaspoon ground cinnamon, and salt until well combined and lump-free.
  • In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry and stir gently until just combined; avoid overmixing to keep pancakes tender.

Cook Pancakes

  • Heat a lightly oiled or buttered non-stick griddle over medium-low heat until it sizzles gently.
  • Pour ¼ cup of batter per pancake, cooking for 2-3 minutes per side until bubbles appear, edges are set, and both sides are golden brown and cooked through.

Cinnamon Sugar Coating

  • While pancakes cook, combine ¼ cup granulated sugar with 1 ½ teaspoons of ground cinnamon in a small bowl.
  • Immediately after removing each pancake from the griddle, sprinkle generously with the cinnamon sugar mixture and gently press to adhere.

Serve

  • Stack your finished pancakes and serve warm with desired toppings like chocolate sauce, dulce de leche, or whipped cream.

Notes

For extra indulgence, serve with a variety of toppings such as warm chocolate dipping sauce, creamy dulce de leche, sliced fresh fruit like bananas or berries, a dollop of whipped cream, toasted pecans or almonds, crushed Biscoff cookies for a spiced crunch, or a scoop of vanilla ice cream. Pure maple syrup can also be drizzled over the top for a classic pancake touch.
