Ingredients
  

For the Crust:

  • 1 ½ cups cups Graham Cracker Crumbs (180g)
  • 1/2 cup cups Melted Unsalted Butter (113g)
  • 2 tbsp tbsp Granulated Sugar (25g)

For the Cheesecake Filling:

  • 16 oz oz Cream Cheese full-fat, softened to room temperature (450g)
  • 1/2 cup cups Granulated Sugar (100g)
  • 1 Large Egg
  • 1/4 cup cups Sour Cream (60g)
  • 1 tsp tsp Vanilla Extract
  • 1/2 tsp tsp Lemon Juice (optional)

For Decoration:

  • 12 oz oz White Chocolate Melts (or Candy Melts) (340g)
  • 1/2 tsp tsp Green Food Coloring gel preferred, about
  • Holiday Sprinkles stars, nonpareils, or sanding sugar
  • Pretzel Sticks or Mini Popsicle Sticks, broken into 1-inch pieces

Instructions
 

Preparing the Crust:

  • In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar, then mix until well combined.
  • Press about 1 tablespoon of the crust mixture firmly into each cavity of a silicone Christmas tree mold; alternatively, use a mini muffin tin lined with paper liners.
  • Refrigerate the molds while you prepare the filling.

Making the Cheesecake Filling:

  • In a large bowl, use an electric mixer to beat the softened cream cheese and granulated sugar until smooth and creamy.
  • Add the egg, sour cream, vanilla extract, and optional lemon juice; beat on low speed until just combined, being careful not to overmix.
  • Carefully spoon or pipe the cheesecake filling over the crusts in your molds, filling them about ¾ full.
  • Preheat your oven to 325°F (160°C), then place the molds on a baking sheet and bake for 15-20 minutes, until the edges are set but the centers are slightly jiggly.
  • Let them cool completely at room temperature, then transfer to the refrigerator to chill for at least 4 hours, or preferably overnight, until firm.

Decorating Your Festive Bites:

  • In a microwave-safe bowl, melt the white chocolate melts according to package directions, then stir in a few drops of green gel food coloring to achieve your desired color.
  • Carefully remove the chilled cheesecake bites from their molds.
  • Dip each cheesecake bite into the melted green chocolate, ensuring it is completely coated; use a fork to help dip and drain excess chocolate.
  • While the chocolate is still wet, immediately add your favorite holiday sprinkles.
  • Gently insert a small piece of pretzel stick or a mini popsicle stick into the bottom of each "tree" to serve as the trunk or handle.
  • Place the decorated cheesecake bites on parchment paper or a wire rack and let the chocolate set completely, optionally refrigerating to speed up the process.

Notes

For best results, ensure cream cheese is fully softened to room temperature for a smooth filling. Do not overmix the cheesecake filling once the egg is added to prevent cracking. Chilling the cheesecake bites for at least 4 hours, or preferably overnight, is crucial for firmness before decorating. To speed up chocolate setting, place decorated bites in the refrigerator.
