  • 1 pound Fresh Strawberries hulled and sliced
  • 1/4 cup Powdered Sugar (Confectioners' Sugar)
  • 8 ounces Mascarpone Cheese chilled
  • 1 cup Heavy Cream chilled, (or Whipping Cream)
  • 1 teaspoon Vanilla Extract
  • 1 package Ladyfingers (24-30), crisp, dry variety
  • 1/4 cup Strawberry Jam or Preserves slightly warmed or thinned with 1 tablespoon water

Optional Garnish

  • Fresh mint leaves or extra sliced strawberries

Instructions
 

Preparation

  • Combine sliced fresh strawberries with 2 tablespoons of powdered sugar in a bowl and let sit for 5-10 minutes to create a syrup.
  • In a large bowl, beat chilled mascarpone cheese, heavy cream, remaining 2 tablespoons of powdered sugar, and vanilla extract until fluffy with soft peaks.
  • Warm strawberry jam/preserves slightly or thin with water to a pourable consistency and pour into a shallow dish.

Assembly

  • Quickly dip one side of each ladyfinger into the strawberry dipping liquid until moistened, do not soak them.
  • Arrange a single layer of dipped ladyfingers at the bottom of a 9x5 inch loaf pan or an 8x8 inch square dish.
  • Spread half of the mascarpone cream mixture over the ladyfingers, then top with half of the macerated strawberries and their juices.
  • Repeat the layers: add another layer of dipped ladyfingers, the remaining mascarpone cream, and the rest of the strawberries.

Chilling and Serving

  • Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, for flavors to meld and ladyfingers to soften.
  • Garnish with fresh mint leaves or extra strawberry slices just before serving.

Notes

For best results, make sure all dairy ingredients are well chilled before beginning. Overbeating the mascarpone cream can cause it to curdle, so beat until just soft peaks form. If you don't have an electric mixer, you can use a whisk, though it will require more effort. The longer the tiramisu chills, the better the flavors will meld and the ladyfingers will soften to a cake-like consistency.
