  • 2 lbs chicken breasts
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 cup Parmesan cheese grated
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups fresh spinach packed, optional
  • 1/4 cup fresh basil chopped for garnish (optional)

Instructions
 

Preparation

  • Place chicken breasts at the bottom of the slow cooker.
  • In a bowl, whisk together heavy cream, chicken broth, chopped sun-dried tomatoes, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, red pepper flakes, salt, and black pepper.
  • Pour the sauce mixture evenly over the chicken breasts in the slow cooker.

Cooking

  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the chicken is cooked through and tender.
  • Remove the chicken from the slow cooker and shred it using two forks, then return the shredded chicken to the sauce.
  • If using, stir in fresh spinach and allow it to wilt for about 5-10 minutes.

Serving

  • Serve immediately over pasta, rice, or with a side of vegetables, garnishing with fresh basil if desired.

Notes

For a spicier kick, add more red pepper flakes. This dish is excellent served with a crusty bread to soak up the delicious sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
