  • 1 pint cherry or grape tomatoes halved or quartered
  • 8 oz fresh mozzarella small balls (bocconcini/ciliegine) or a large ball diced
  • 1/2 cup fresh basil leaves thinly sliced (chiffonade) or roughly chopped
  • 2 tablespoons good quality extra virgin olive oil
  • 2-3 tablespoons balsamic glaze store-bought or homemade
  • Salt to taste
  • Freshly ground black pepper to taste

Preparation

  • Halve or quarter the cherry/grape tomatoes. Dice the mozzarella into bite-sized pieces, similar to the tomatoes, or halve pre-portioned mozzarella balls if using.

Chop Basil

  • Stack and roll basil leaves tightly, then slice thinly to create ribbons (chiffonade), or roughly chop the leaves.

Combine and Season

  • Gently combine the chopped tomatoes, mozzarella, and fresh basil in a medium mixing bowl. Drizzle with olive oil, then season generously with salt, freshly ground black pepper, and optional red pepper flakes, tossing until well combined.

Serve

  • Transfer the Caprese mixture to a shallow serving dish or platter. Just before serving, generously drizzle with balsamic glaze and serve immediately with toasted baguette slices, crostini, or sturdy crackers.

Notes

For best flavor, use high-quality ingredients, especially for the olive oil and balsamic glaze. This dip is best served fresh but can be prepared a couple of hours in advance, keeping the balsamic glaze separate until just before serving to prevent the tomatoes from becoming watery.
