  • 1.5 lbs salmon fillets skin-on preferred, but skinless works
  • 1/2 cup unsalted butter
  • 4-6 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1/2 lemon for juice and optional wedges for serving
  • Salt to taste
  • Black pepper to taste
  • 1-2 tablespoons olive oil for searing

Preparation

  • Pat the salmon fillets dry with paper towels and season generously with salt and pepper.
  • Melt butter in a bowl or saucepan, then stir in minced garlic and chopped parsley to create the garlic butter mixture.

Cooking

  • Heat olive oil in an oven-safe skillet over medium-high heat.
  • Sear salmon skin-side down for 4-5 minutes, or 3-4 minutes for skinless, until a crust forms.
  • Flip the salmon and spoon half of the garlic butter mixture over the fillets.
  • Finish cooking by either baking in a preheated 400°F (200°C) oven for 6-10 minutes, or by reducing stovetop heat to medium-low, covering, and cooking for 5-8 minutes, basting with garlic butter.

Serving

  • Remove from heat, squeeze fresh lemon juice over the salmon, and let it rest for a few minutes.
  • Drizzle with any remaining garlic butter from the pan before serving.

Notes

For extra flavor, marinate the salmon in a small amount of lemon juice and olive oil for 15 minutes before searing. Adjust garlic and parsley amounts to your personal preference. Serve with a side of roasted vegetables or a fresh salad.
