  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper any color, diced
  • 1 (15-ounce) can diced tomatoes undrained
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1/2 cup frozen corn optional, but adds a nice sweetness
  • 1/4 cup fresh parsley or cilantro chopped, for garnish

  • Heat olive oil in a large skillet or non-stick pan over medium-high heat.
  • Add ground turkey to the hot skillet, break it apart, and cook until browned and no longer pink (5-7 minutes). Drain excess fat.
  • Add chopped onion and diced bell pepper to the skillet, sauté for 5-7 minutes until softened, then stir in minced garlic and cook for another minute until fragrant.
  • Pour in diced tomatoes and broth, stir in Italian seasoning, paprika, salt, and pepper, then bring to a simmer.
  • If using, stir in frozen corn and simmer for 5-7 minutes, allowing the liquid to reduce and flavors to meld.
  • Taste and adjust seasonings, then remove from heat, garnish with fresh parsley or cilantro, and serve hot.

Notes

This recipe is highly adaptable. Feel free to add other vegetables like zucchini or spinach. For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning.
