Ingredients
  

Meatloaf Mixture

  • 2 lbs Ground Beef (80/20 lean-to-fat ratio)
  • 2 Eggs large
  • 1 cup Breadcrumbs (Panko or regular)
  • 1 Onion medium, finely diced
  • 3 cloves Garlic minced
  • 1/2 cup Ketchup (divided for mixture and glaze)
  • 2 tbsp Worcestershire Sauce (divided for mixture and glaze)
  • 1 tbsp Dijon Mustard (divided for mixture and glaze)
  • 1/2 cup Milk
  • 1.5 tsp Salt
  • 1 tsp Black Pepper

Glaze

  • 1/4 cup Brown Sugar
  • 1 tbsp Apple Cider Vinegar

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C) and grease two standard loaf pans or line with parchment paper.
  • In a large bowl, whisk together eggs, milk, 1 tablespoon Worcestershire sauce, and 1/2 tablespoon Dijon mustard.
  • Stir in diced onion, minced garlic, and breadcrumbs, letting the mixture sit for 5 minutes.

Mixing & Baking

  • Add ground beef, salt, and pepper to the bowl; gently mix by hand until just combined, avoiding overmixing.
  • Divide the mixture evenly between the prepared loaf pans and gently press to form loaves.
  • Bake for 40 minutes.
  • While baking, whisk together remaining ketchup, brown sugar, apple cider vinegar, remaining Worcestershire sauce, and Dijon mustard for the glaze.

Glazing & Resting

  • After 40 minutes, remove meatloaves, spread glaze evenly over each, and bake for another 15-20 minutes, or until internal temperature reaches 160°F (71°C).
  • Remove from oven, tent with foil, and let rest for 10-15 minutes before slicing to ensure a moist and flavorful result.

Notes

For best results, do not overmix the meatloaf mixture to keep it tender. Letting the meatloaf rest after baking is crucial for juicy slices.
