  • 1 pound fresh strawberries hulled and sliced
  • 1/4 cup granulated sugar adjust to taste
  • 1 teaspoon lemon juice
  • 1 packet unflavored gelatin about 1/4 ounce or 7g
  • 1/4 cup cold water
  • 1 1/2 cups heavy cream about 360ml), chilled
  • 1 teaspoon vanilla extract

Preparation

  • Combine fresh strawberries, granulated sugar, and lemon juice in a food processor or blender; process until smooth, then adjust sugar to taste.
  • Sprinkle gelatin over cold water in a microwave-safe bowl and let it sit for 5 minutes to soften.
  • Microwave the bloomed gelatin for 10-15 seconds until completely dissolved and clear, taking care not to boil it.
  • Pour the dissolved gelatin into the strawberry purée, mix well, and set aside.
  • In a chilled bowl, beat heavy cream with vanilla extract on medium-high speed until medium-soft peaks form, being careful not to overbeat.
  • Gently fold one-third of the whipped cream into the strawberry mixture to lighten it, then carefully fold in the remaining whipped cream until uniformly pink and airy.
  • Divide the mousse into serving dishes, cover, and refrigerate for at least 4 hours or preferably overnight until set.

Notes

For best results, make sure your heavy cream and mixing bowl are well-chilled before whipping. Adjust the amount of sugar in the strawberry purée to your personal preference, depending on the sweetness of your strawberries. For an extra touch, garnish with fresh strawberries, a sprig of mint, or a dusting of powdered sugar before serving.
