Ingredients
  

Truffle Base

  • 2 cups gingerbread cookies (stale or lightly toasted)
  • 4 ounces cream cheese (full-fat, softened)
  • 1/4 cup molasses (dark, robust)
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • freshly grated nutmeg Pinch of
  • 1/2 teaspoon pure vanilla extract
  • orange zest Zest of 1 orange

Coating (optional)

  • Confectioners' sugar or melted white chocolate (optional, for coating)

Instructions
 

Preparation

  • Pulse gingerbread cookies in a food processor until finely ground, or crush them using a rolling pin in a sturdy Ziploc bag.
  • Beat softened cream cheese with molasses, ginger, cinnamon, cloves, nutmeg, vanilla, and orange zest until smooth.
  • Add cookie crumbs to the wet mixture and mix thoroughly until a thick, dough-like consistency forms, using your hands if necessary.

Chilling and Shaping

  • Cover the bowl and refrigerate for at least 30 minutes, or until the mixture is firm enough to roll.
  • Scoop 1-tablespoon portions and roll them between your palms to form smooth, uniform balls.

Finishing Touches

  • Optionally, roll truffles in confectioners' sugar or dip in melted white chocolate, allowing excess to drip off.
  • Place truffles on parchment-lined baking paper and refrigerate for another 15-20 minutes until set.

Notes

For best results, make sure your cream cheese is fully softened for a smoother mixture. If the mixture is too sticky to roll, chill it for an additional 15-30 minutes. These truffles are best stored in an airtight container in the refrigerator.
