Ingredients
  

For the Oklahoma Fried Onion Burgers:

  • 1.5 lbs ground beef (80/20 Chuck works best)
  • 1 large yellow onion, very thinly sliced very thinly sliced
  • 4 slices American cheese (or your favorite melting cheese)
  • 4 burger buns, preferably potato rolls, toasted preferably potato rolls, toasted
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp vegetable oil (or high smoke point oil) or high smoke point oil

For the Tangy BBQ Aioli:

  • 1/2 cup mayonnaise
  • 2 tbsp BBQ sauce (your favorite brand)
  • 1 tsp apple cider vinegar
  • 1/2 tsp smoked paprika
  • cayenne pepper optional

For the Creamy Avocado Ranch:

  • 1 ripe avocado, pitted and scooped out pitted and scooped out
  • 1/2 cup sour cream or plain Greek yogurt
  • 2 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 clove garlic, minced
  • 1 tbsp ranch seasoning mix (or 1 tsp dried dill, 1 tsp dried chives, 1/2 tsp onion powder, 1/2 tsp garlic powder) or 1 tsp dried dill, 1 tsp dried chives, 1/2 tsp onion powder, 1/2 tsp garlic powder
  • Salt to taste

For the Spicy Honey Mustard:

  • 1/2 cup Dijon mustard
  • 1/4 cup honey
  • 1 tbsp hot sauce (like Sriracha or Frank's RedHot)
  • 1 tsp apple cider vinegar

Instructions
 

For the Oklahoma Fried Onion Burgers:

  • Thinly slice the yellow onion; a mandoline slicer is recommended for best results.
  • Divide the ground beef into four equal portions and loosely form them into balls.
  • Heat a cast-iron skillet or griddle over medium-high heat and add vegetable oil.
  • Place a beef ball on the hot griddle, top with onions, then smash firmly with a spatula or press; season with salt and pepper.
  • Cook for 3-4 minutes until edges are crispy and onions are caramelized.
  • Flip the burger, immediately place a slice of cheese on top, and toast buns on the griddle simultaneously.
  • Continue cooking for 2-3 more minutes until the cheese is melted and the burger is cooked to your liking.
  • Assemble the cheeseburger on the toasted bun, and repeat for the remaining burgers.

For the Dips:

  • For the Tangy BBQ Aioli, whisk all ingredients (mayonnaise, BBQ sauce, apple cider vinegar, smoked paprika, and optional cayenne) until smooth; adjust seasonings to taste.
  • For the Creamy Avocado Ranch, blend avocado, sour cream, lime juice, cilantro, minced garlic, ranch seasoning, and salt until smooth; add a splash of water or milk if needed for consistency.
  • For the Spicy Honey Mustard, whisk Dijon mustard, honey, hot sauce, and apple cider vinegar until smooth.

Notes

For an extra kick, try adding a pinch of red pepper flakes to the Tangy BBQ Aioli. You can also customize the ranch seasoning in the Creamy Avocado Ranch with your favorite fresh herbs like chives or parsley. Don't overwork the ground beef when forming patties to ensure a tender burger.
