Festive Cranberry & Brie Bites with Rosemary

These elegant and easy-to-make Festive Cranberry & Brie Bites are the perfect appetizer for any holiday gathering. Flaky puff pastry cradles sweet cranberry sauce and creamy brie, all topped with fragrant rosemary.

Ingredients
  

Main

  • 1 sheet (14 oz) frozen puff pastry
  • 1/2 cup whole berry cranberry sauce
  • 4 ounces brie cheese rind removed, cut into 1/2-inch pieces
  • 1 tablespoon fresh rosemary finely chopped
  • 1 tablespoon melted butter optional, for brushing
  • Powdered sugar for dusting (optional)

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C) and lightly grease a mini muffin tin or line with mini paper liners.
  • Unroll the thawed puff pastry on a lightly floured surface and gently roll it out to an 11x11 inch square.

Assembly

  • Cut the puff pastry into 24 equal squares, approximately 1.75 inches each.
  • Press each square into the prepared mini muffin cups, forming a cup shape.
  • Place about 1/2 teaspoon of cranberry sauce into the bottom of each puff pastry cup, then top with a small piece of brie cheese.
  • Sprinkle a pinch of chopped fresh rosemary over the brie in each cup. Optionally, brush puff pastry edges with melted butter for a golden shine.

Baking and Serving

  • Bake for 12-15 minutes until the pastry is golden brown and puffed, and the brie is melted and bubbly.
  • Carefully remove the bites from the muffin tin and cool on a wire rack for a few minutes. Optionally dust with powdered sugar before serving warm.

Notes

These bites are best served warm. If preparing ahead, reheat gently in a 300°F (150°C) oven for 5-7 minutes until cheese is melted and pastry is crisp. For a spicier kick, add a tiny pinch of red pepper flakes with the rosemary.
