Ingredients
  

Crust

  • 10-12 standard-sized gingerbread cookies or 1.5 cups crumbs
  • 4 tablespoons unsalted butter melted

Cheesecake Filling

  • 16 ounces (2 blocks) full-fat cream cheese softened
  • 1 cup powdered sugar
  • 1 cup heavy cream cold
  • 1.5 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract

Preparation

  • Pulse gingerbread cookies in a food processor until fine crumbs form, or crush them in a Ziploc bag with a rolling pin.
  • Transfer crumbs to a bowl, add melted butter, and stir until combined.
  • Divide the crumb mixture among 6-8 small cups, press firmly into the bottom, and chill in the refrigerator.

Cheesecake Filling

  • In a chilled bowl, whip cold heavy cream with an electric mixer until stiff peaks form, then set aside.
  • In a separate bowl, beat softened cream cheese and powdered sugar until smooth and creamy.
  • Beat in ground ginger, cinnamon, nutmeg, molasses, and vanilla extract until fully incorporated.
  • Gently fold one-third of the whipped cream into the cream cheese mixture, then fold in the remaining whipped cream until light and uniform.
  • Spoon or pipe the cheesecake filling into the prepared gingerbread crust cups and smooth the tops.
  • Refrigerate for at least 4 hours, or preferably overnight, until the cheesecake is firm and set.

Serving

  • Before serving, garnish with whipped cream, extra gingerbread crumbs, or candied ginger pieces as desired.

Notes

For best results, ensure all dairy ingredients are well chilled (heavy cream) or softened (cream cheese) as specified. Do not overmix the cheesecake filling once the whipped cream is added, as this can reduce its airiness and light texture.
