Freezer-Friendly Lasagna Soup

Ingredients
  

Soup Base

  • 1 tbsp Olive oil
  • 1 lb Ground beef or Italian sausage or a mix of both
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 1 (28 oz) can Crushed tomatoes
  • 1 (15 oz) can Diced tomatoes undrained
  • 6 cups Beef or chicken broth low sodium is good for freezing
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black pepper or to taste
  • 8-10 Lasagna noodles broken into 1-inch pieces (cook separately or add right before serving if not freezing, or cook very al dente if freezing with soup)
  • 1/2 cup Heavy cream optional, for richness

For the Ricotta Swirl (to be added upon serving)

  • 15 oz Ricotta cheese
  • 1/4 cup Grated Parmesan cheese
  • 1/4 cup Fresh parsley chopped
  • 1/4 tsp Garlic powder
  • Pinch Salt and pepper

Instructions
 

Soup Preparation

  • Heat olive oil in a large pot. Add ground beef or Italian sausage and cook until browned, then drain excess grease.
  • Add diced onion to the pot and cook for 5-7 minutes until softened. Stir in minced garlic and cook for one more minute until fragrant.
  • Pour in crushed tomatoes and diced tomatoes (with juices). Stir in broth, basil, oregano, salt, and pepper, then bring to a simmer.
  • Reduce heat to low, cover, and simmer for 20-30 minutes to meld flavors.
  • Cook broken lasagna noodles in a separate pot of salted water until very al dente. Drain, rinse with cold water, and toss with a little olive oil to prevent sticking.
  • If desired, stir in heavy cream during the last few minutes of simmering the soup base.

Ricotta Swirl Preparation & Serving

  • In a small bowl, combine ricotta cheese, grated Parmesan, fresh parsley, garlic powder, and a pinch of salt and pepper; mix well.
  • Ladle hot soup into bowls. Top each serving with a generous spoonful of the seasoned ricotta mixture, and optionally sprinkle with fresh Parmesan and parsley.

Notes

For best freezing results, ensure noodles are very al dente or slightly undercooked as they will soften further upon reheating. Do not add the ricotta swirl to the main soup if freezing; prepare it fresh when serving. Allow soup to cool completely before portioning into freezer-safe containers. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave.
