Garlic Parmesan Cheeseburger Bombs

These savory bombs are packed with seasoned ground beef and melty cheddar cheese, all wrapped in a flaky biscuit and topped with a delicious garlic parmesan butter. Perfect as a fun appetizer or a quick meal.

Ingredients
  

Cheeseburger Filling

  • 1 lb ground beef (80/20 or 90/10 works well)
  • 1/2 cup finely diced onion (optional, but highly recommended for flavor)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 8 cheddar cheese (slices, cut into quarters, or 8 oz shredded cheddar cheese)
  • 1/4 cup dill pickle relish or finely diced pickles (optional, for that classic burger taste)

Biscuit Dough

  • 1 refrigerated biscuit dough (16.3 oz) can (8 large biscuits)

Garlic Parmesan Topping

  • 1/4 cup unsalted butter, melted
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional, for garnish and freshness)

Instructions
 

Prepare the Cheeseburger Filling

  • Brown the ground beef in a large skillet, adding diced onion if desired, until softened.
  • Drain excess grease, then stir in Worcestershire sauce, garlic powder, onion powder, salt, and pepper; cook for 2-3 minutes to meld flavors.
  • Remove from heat and stir in pickle relish or diced pickles, then let the mixture cool slightly.

Preheat & Prep Dough

  • Preheat oven to 375°F (190°C) and grease a baking sheet or line with parchment paper.
  • Separate each biscuit and flatten it into a 4-5 inch thin circle on a lightly floured surface.

Assemble the Bombs

  • Place two tablespoons of cooled beef mixture in the center of each biscuit.
  • Top the beef with a quarter cheese slice or a pinch of shredded cheese and securely pinch the dough edges together to form a ball, placing seam-side down on the baking sheet.

Garlic Parmesan Topping

  • Melt butter and stir in minced garlic in a small bowl, then brush this mixture generously over the assembled bombs.
  • Evenly sprinkle the grated Parmesan cheese over the garlic butter-brushed bombs.

Bake

  • Bake for 14-18 minutes until golden brown and cooked through, adjusting time as needed for your oven.

Serve & Enjoy

  • Remove from the oven, optionally sprinkle with fresh chopped parsley, and let cool for a few minutes before serving to avoid hot filling burns.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the beef mixture. If you don't have parchment paper, ensure your baking sheet is very well greased to prevent sticking. These bombs are delicious served with a side of ketchup, mustard, or your favorite burger sauce for dipping!
