  • 1 lb large shrimp peeled and deveined, tails on or off, thawed if frozen, and patted very dry
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes or to taste
  • Salt and freshly ground black pepper to season
  • 1 tbsp fresh lemon juice from about half a lemon
  • 2 tbsp fresh parsley chopped, for garnish

Preparation

  • Ensure shrimp are thawed and very dry, then season them with salt, pepper, smoked paprika, and dried oregano.

Cooking

  • Heat a cast iron skillet over medium-high heat for 3-5 minutes until smoking slightly.
  • Add olive oil and butter to the skillet, then add minced garlic and sauté for 30 seconds until fragrant.
  • Place seasoned shrimp in a single layer in the skillet, cooking for 1-2 minutes per side until pink and opaque.

Finishing Touches

  • Remove the skillet from heat, add lemon juice and chopped parsley, then toss gently and serve immediately.

Notes

For extra flavor, you can marinate the shrimp for 15 minutes before cooking. Ensure the skillet is very hot before adding the shrimp to get a good sear.
