Bruschetta Grilled Cheese

  • 4 slices sturdy bread (sourdough or ciabatta recommended)
  • 4 slices provolone or mozzarella cheese
  • 1 cup ripe Roma tomatoes diced
  • 1 clove garlic minced
  • 1/4 cup fresh basil leaves chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic glaze optional
  • 2 tablespoons unsalted butter softened
  • Salt & pepper to taste

Instructions
 

Bruschetta Grilled Cheese

  • In a medium bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, and a pinch of salt and pepper; stir gently and optionally drizzle in balsamic glaze, then set aside.
  • Spread butter evenly on one side of each bread slice.
  • Place two butter-sided down bread slices in a non-stick skillet over medium heat, then top each with a slice of cheese.
  • Spoon a generous amount of bruschetta mixture over the cheese on each sandwich half, then place another slice of cheese on top of the bruschetta.
  • Place the remaining two bread slices, butter-side up, on top of the cheese and bruschetta, then cook for 3-5 minutes per side until golden brown with melted, bubbly cheese, pressing gently with a spatula for even cooking.
  • Carefully remove the grilled cheese from the skillet, slice in half, and serve hot.

Notes

For extra flavor, you can toast the bread lightly before adding the butter and cheese. Be careful not to overcrowd the skillet; cook in batches if necessary.
