Flatbread Base

  • 2 pre-made flatbreads
  • 4 oz brie

Toppings

  • 1/4 cup cranberry sauce
  • 1 tablespoon fresh rosemary
  • 1 tablespoon extra virgin olive oil
  • 1 pinch freshly ground black pepper
  • chopped walnuts or pecans Optional to add for crunch

Preparation

  • Preheat your oven to 400°F (200°C) and place a pizza stone in the oven if using for extra crispiness.

Assembly

  • Drizzle each flatbread lightly with olive oil to ensure a crispy base.
  • Evenly distribute the brie slices or pieces over each flatbread, leaving a small border for the crust.
  • Spoon small dollops of cranberry sauce over the brie, as the heat will help it spread.
  • Sprinkle with chopped fresh rosemary and a pinch of black pepper, and add optional nuts if desired.

Baking and Serving

  • Carefully transfer the flatbreads to the preheated oven or pizza stone and bake for 8-12 minutes, until the brie is melted and the edges are golden and crispy.
  • Remove from the oven, cool for a minute, then slice and serve immediately.

Notes

For variation, try substituting fresh thyme for rosemary or adding a touch of balsamic glaze after baking. This recipe is easily scalable for larger gatherings.
