  • 2-3 tablespoons vegetable oil or butter, for frying

Preparation

  • In a large bowl, combine cold mashed potatoes, egg, flour, Parmesan cheese, chives, garlic powder, salt, and pepper. Gently mix until just combined, being careful not to overmix.
  • Divide the mixture into 6-8 equal portions, then shape each into a flat, round patty about 1/2 inch thick, lightly flouring your hands if needed.

Cooking

  • Heat 2-3 tablespoons of vegetable oil or butter in a large non-stick skillet over medium heat until shimmering.
  • Carefully place the potato patties into the hot skillet in batches, ensuring not to overcrowd the pan.
  • Cook for 4-6 minutes per side, or until each side is golden brown and crispy and heated through.

Serving

  • Transfer cooked potato cakes to a plate lined with paper towels to absorb excess oil. Serve immediately.

Notes

Ensure your mashed potatoes are cold for the best texture. Do not overmix the potato mixture, as this can lead to tough potato cakes. Serve these potato cakes as a side dish or a light appetizer.
