Ingredients
  

Salmon and Seasoning

  • 2 (4-6 oz) salmon fillets
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • 1/2 lemon thinly sliced (optional, for baking/pan-frying)

Dill Spread

  • 1/4 cup mayonnaise (or Greek yogurt)
  • 1 tbsp fresh dill, chopped (or dried dill)
  • 1 tsp lemon juice
  • 1/2 tsp Dijon mustard
  • 1 small garlic clove, minced optional

Assembly

  • 4 slices of your favorite bread
  • Lettuce leaves
  • Tomato slices
  • Red onion, thinly sliced optional
  • Cucumber slices optional

Instructions
 

Prepare the Salmon

  • If baking, preheat the oven to 400°F (200°C), season the salmon with olive oil, salt, and pepper, and bake for 12-15 minutes.
  • If pan-frying, heat olive oil in a skillet, season the salmon, and cook for 4-6 minutes per side until browned.
  • Let the cooked salmon cool slightly, then gently flake it into bite-sized pieces, discarding the skin.

Make the Spread

  • Combine mayonnaise, dill, lemon juice, Dijon mustard, and minced garlic in a bowl, then stir until well combined and season to taste.

Prepare the Bread

  • Lightly toast the bread slices until they are golden brown.

Assemble the Sandwich

  • Spread a generous layer of the dill spread on one side of each toasted bread slice.
  • On two of the slices, arrange lettuce, tomato, and optional red onion and cucumber slices, then distribute the flaked salmon over the vegetables.
  • Top with the remaining bread slices, spread-side down.

Serve Immediately

  • Cut the sandwiches in half if desired, and serve immediately.

Notes

For extra flavor, lightly grill or toast the lemon slices before adding them to the salmon during baking. Adjust the amount of dill and lemon juice in the spread to your personal preference. This sandwich is best enjoyed fresh, but you can prepare the salmon and dill spread ahead of time and assemble just before serving.
