Ingredients
  

Main Ingredients

  • 2 cups apple cider vinegar
  • 1/2 cup low sodium soy sauce
  • 1/4 cup water
  • 1/4 cup molasses
  • 2 tablespoons tamarind paste
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon allspice
  • 1/4 teaspoon red pepper flakes
  • 1/8 teaspoon cloves
  • 1 teaspoon anchovy paste optional

Sweetener (adjust to taste)

  • 1 tablespoon maple syrup or brown sugar

Instructions
 

Preparation

  • Combine all ingredients in a medium saucepan.
  • Whisk thoroughly to ensure all ingredients are well combined and there are no lumps.

Cooking

  • Bring the mixture to a boil over medium-high heat, then immediately reduce the heat to low.
  • Simmer gently for at least 45-60 minutes, stirring occasionally, until the sauce has thickened slightly and the flavors have melded.
  • Taste the sauce and adjust seasonings as needed, adding more maple syrup or brown sugar for sweetness, or a pinch more salt/pepper.

Finishing

  • Remove from heat and let the sauce cool completely in the saucepan.
  • Once cool, strain the mixture through a fine-mesh sieve or cheesecloth to remove any solids, resulting in a smooth sauce.
  • Pour the gourmet Worcestershire sauce into a clean, airtight bottle or jar and store it in the refrigerator.

Notes

This gourmet Worcestershire sauce can be stored in the refrigerator for up to 3 months. It’s perfect for marinades, dressings, and as a flavor enhancer in many savory dishes. For an even deeper flavor, let it sit for a day before using.
