For the Crust

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened (1 stick)
  • 1/4 cup granulated sugar

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup freshly squeezed lemon juice (from about 2 lemons)
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon lemon zest
  • salt Pinch of

For dusting

  • Powdered sugar optional

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  • In a medium bowl, combine flour, softened butter, 1/4 cup granulated sugar, and a pinch of salt until crumbly.
  • Press the crust mixture evenly into the prepared baking pan and bake for 15-20 minutes, or until lightly golden brown.
  • While the crust bakes, whisk together eggs, 1 cup granulated sugar, lemon juice, 1 tablespoon flour, lemon zest, and a pinch of salt until smooth.
  • Pour the lemon filling evenly over the hot crust once it's out of the oven.
  • Return to the oven and bake for an additional 20-25 minutes until the filling is set and edges are lightly golden.
  • Cool completely on a wire rack, then refrigerate for at least 2 hours to firm up.
  • Lift the bars out using the parchment paper, dust with powdered sugar if desired, then slice and serve.

Notes

For best results, ensure the butter is truly softened for the crust. When baking the filling, a slight jiggle in the center indicates perfect doneness; it will set completely as it cools. Chilling is crucial for clean slices.
