Ingredients
  

For the Salmon:

  • 4 (6 oz) salmon fillets skin on or off (your preference)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste

For the Luxurious Creamy Dijon Sauce:

  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1/2 cup dry white wine (like Chardonnay or Pinot Grigio) OR chicken or vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard whole grain or smooth, depending on your texture preference
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon fresh parsley chopped (for garnish, optional)

Instructions
 

Prepare the Salmon

  • Pat the salmon fillets dry, then rub with olive oil and season generously with salt and pepper.

Grill the Salmon

  • Preheat your grill to medium-high heat (400-450°F / 200-230°C). Place salmon skin-side down and grill for 4-6 minutes per side until cooked through and flaky, or until an internal temperature of 125-130°F (52-54°C) is reached for medium-rare.

Make the Creamy Dijon Sauce

  • While salmon grills, melt butter in a small saucepan and sauté minced garlic for about 1 minute until fragrant.
  • Pour in white wine or broth, bring to a simmer, and reduce by half (2-3 minutes), scraping up any browned bits.
  • Stir in heavy cream and Dijon mustard, whisking until combined, then simmer gently for 2-3 minutes until slightly thickened.
  • Remove sauce from heat, stir in fresh lemon juice, and adjust seasoning with salt and pepper to taste.

Serve

  • Transfer grilled salmon to plates, spoon the creamy Dijon sauce over each fillet, and garnish with fresh chopped parsley if desired.

Notes

For extra flavor, you can marinate the salmon in a little lemon juice and herbs for 15-20 minutes before grilling. Ensure the grill grates are clean and oiled to prevent the salmon from sticking. Be careful not to overcook the salmon, as it can dry out quickly. The sauce can be made ahead of time and gently reheated; if it separates, whisk it vigorously over low heat to bring it back together.
