  • 1 large head fresh cauliflower florets
  • 6 cloves garlic minced
  • 2 tablespoons butter or olive oil
  • 1/2 cup unsweetened almond milk
  • 1/4 cup light cream cheese
  • 1 tablespoon nutritional yeast (optional, for cheesy flavor)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon fresh rosemary minced (optional)

Instructions
 

Preparation

  • Wash and cut the cauliflower into florets. Steam or boil until fork-tender, then drain thoroughly.
  • Mince the garlic. Sauté garlic in butter or olive oil over medium-low heat for 1-2 minutes until fragrant, without browning.
  • Transfer cooked cauliflower and sautéed garlic to a food processor or large bowl.
  • Add almond milk, light cream cheese, nutritional yeast, salt, black pepper, onion powder, and fresh rosemary to the mixture.
  • Process or mash until smooth and creamy, scraping sides if using a food processor.
  • Adjust consistency by adding up to 2 additional tablespoons of almond milk if the mash is too thick.
  • Taste and adjust seasonings as needed with more salt, pepper, or herbs.
  • Stir in fresh chives just before serving, garnishing with extra chives if desired.

Notes

Ensure the cauliflower is very well drained to prevent a watery mash. For a richer flavor, you can use full-fat cream cheese. Nutritional yeast is excellent for a cheesy depth without dairy.
