Ingredients
  

Fresh Produce

  • 1 large head Fresh Cauliflower florets about 2 pounds
  • 6-8 Garlic cloves
  • Fresh chives or parsley for garnish (optional)

Dairy & Fat

  • 1/2 cup Unsweetened Almond Milk or other non-dairy milk
  • 2 tablespoons Light Cream Cheese or Greek Yogurt
  • 1 tablespoon Olive Oil
  • 1 tablespoon Butter or Ghee optional

Seasonings

  • Salt to taste
  • Black Pepper to taste
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Garlic powder

Instructions
 

Roast the Garlic

  • Preheat oven to 400°F (200°C), prepare garlic with olive oil, wrap in foil, and roast for 20-25 minutes until tender. Once cooled, squeeze out the soft garlic cloves.

Steam or Boil Cauliflower

  • While the garlic roasts, prepare cauliflower by washing and cutting it, then steam or boil until very soft and drain thoroughly.

Combine Ingredients

  • Combine the cooked cauliflower and roasted garlic in a large bowl.

Add Wet Ingredients & Seasonings

  • Add almond milk, cream cheese or Greek yogurt, optional butter/ghee, and all seasonings to the cauliflower mixture.

Mash Until Smooth

  • Mash the mixture using a blender, potato masher, or food processor until it reaches a smooth consistency.

Adjust & Taste

  • Taste the mashed cauliflower and adjust seasonings as needed, adding more almond milk if a thinner consistency is desired.

Serve Hot

  • Transfer the mashed cauliflower to a serving dish.

Garnish (Optional)

  • Optionally, garnish with fresh chives or parsley before serving.

Notes

For extra smooth results, use a blender or food processor. Ensure the cauliflower is thoroughly drained after cooking to prevent watery mash. Adjust consistency by adding more almond milk if desired.
