  • 1 tbsp olive oil
  • 1 lb lean ground turkey or extra-lean ground beef
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can diced tomatoes undrained
  • 6 cups low-sodium chicken or vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes optional, for a kick
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 6-8 lasagna noodles broken into 1-2 inch pieces (whole wheat or gluten-free options work great!)

For Serving

  • 1/2 cup part-skim ricotta cheese
  • 1/4 cup grated Parmesan cheese plus more for serving
  • 2 cups fresh spinach chopped (can also use kale or other greens)
  • Fresh basil or parsley for garnish

Instructions
 

Cooking Steps

  • Heat olive oil in a large pot over medium heat, then add and brown the ground turkey or beef, draining any excess fat.
  • Stir in the diced onion and cook until softened, then add the minced garlic and cook for another minute until fragrant.
  • Pour in crushed tomatoes, diced tomatoes, and broth, then stir in basil, oregano, red pepper flakes, salt, and pepper; bring to a simmer.
  • Add broken lasagna noodles to the simmering mixture, reduce heat to medium-low, cover, and cook for 10-12 minutes until tender, stirring occasionally.
  • Stir in fresh spinach until wilted, then whisk ricotta and Parmesan cheese in a separate bowl.
  • Remove the pot from heat and gently stir about half of the ricotta mixture into the soup.
  • Ladle the hot soup into bowls, dollop with remaining ricotta mixture, and garnish with fresh basil or parsley and extra Parmesan cheese.

Notes

For an extra creamy texture, you can blend a portion of the soup before adding the noodles. Feel free to customize with your favorite vegetables or a different type of ground meat.
