Hearty Beef & Bean Crockpot Chili

This hearty beef and bean chili is made in a crockpot, perfect for a warming meal with minimal effort. It features ground beef, a variety of beans, diced tomatoes, and a blend of spices.

Ingredients
  

Main Ingredients

  • 1.5 lbs ground beef
  • 1 large onion diced
  • 2 bell peppers any color, diced
  • 4 cloves garlic minced

Canned Goods

  • 2 14.5 oz cans diced tomatoes undrained
  • 1 15 oz can tomato sauce
  • 1 15 oz can kidney beans rinsed and drained
  • 1 15 oz can black beans rinsed and drained

Spices and Liquids

  • 1.5 cups beef broth
  • 3 tablespoons chili powder
  • 1.5 tablespoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Pinch cayenne pepper optional, for extra heat

Instructions
 

Preparation

  • In a large skillet, brown the ground beef over medium-high heat, then drain any excess fat.
  • Optionally, sauté the diced onion, bell peppers, and minced garlic in the same skillet for 5-7 minutes until softened.

Slow Cooker Assembly

  • Transfer the browned beef and sautéed aromatics (if used) into your slow cooker.
  • Add all remaining ingredients: diced tomatoes, tomato sauce, rinsed beans, beef broth, and all spices.
  • Stir everything thoroughly to combine well.

Cooking and Serving

  • Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  • Once cooked, taste and adjust seasonings as desired.
  • Ladle into bowls and serve with your favorite toppings.

Notes

For a spicier chili, increase the amount of cayenne pepper. Garnish with shredded cheddar cheese, sour cream, and fresh cilantro for best results.
