  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • 1/2 cup shredded mozzarella cheese optional
  • Fresh parsley, chopped for garnish (optional)

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine the cubed chicken, sliced zucchini, olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper; toss until evenly coated.
  • Transfer the seasoned chicken and zucchini mixture to the prepared baking dish, spreading it out into a single layer.

Cooking

  • Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature 165°F / 74°C) and the zucchini is tender.
  • If using, sprinkle mozzarella cheese over the bake during the last 5 minutes of cooking and return to the oven until melted and bubbly.

Serving

  • Let the bake rest for a few minutes after removing from the oven, then garnish with fresh parsley if desired before serving.

Notes

For an extra kick, add a pinch of red pepper flakes with the seasonings. You can also experiment with other vegetables like bell peppers or cherry tomatoes.
