  • 1 medium onion chopped

  • 15 oz can corn drained
  • 15 oz can black beans rinsed and drained
  • 10.75 oz can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and black pepper to taste
  • 2 cups shredded cheddar cheese (or a cheddar-jack blend)

  • Heat olive oil in a large skillet, then add chopped onion and bell pepper, cooking until softened for 5-7 minutes. Add ground beef, break it apart, and cook until browned, draining excess grease.
  • Reduce heat to medium, then stir in corn, black beans, cream of mushroom soup, milk, chili powder, and cumin. Season with salt and pepper, bring to a gentle simmer, and remove from heat.
  • Transfer the meat and vegetable mixture evenly into a 9x13 inch baking dish.
  • Sprinkle shredded cheddar cheese over the casserole. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the cheese is melted, bubbly, and heated through. Broil for 2-3 minutes for a golden crust, if desired, watching carefully.
