  • 1.5 lbs beef stew meat cut into 1-inch cubes
  • 1 large onion chopped
  • 3 carrots peeled and chopped
  • 3 celery stalks chopped
  • 3 medium potatoes peeled and diced
  • 1 can (28 ounce) diced tomatoes undrained
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 0.5 tsp black pepper
  • 1 tsp salt or to taste
  • 0.5 cup frozen peas added at the end
  • Fresh parsley chopped (for garnish, optional)

Instructions
 

Preparation

  • Optionally, brown the beef stew meat in a skillet over medium-high heat for 5-7 minutes to add flavor depth.
  • Place the chopped onion, carrots, celery, and diced potatoes in the bottom of the crockpot, then add the beef stew meat on top.

Cooking

  • Pour in the undrained diced tomatoes and beef broth, then stir in the dried thyme, dried rosemary, black pepper, and salt.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and vegetables are cooked through.
  • During the last 30 minutes of cooking, stir in the frozen peas.

Serving

  • Taste and adjust seasonings as needed before serving.
  • Ladle the hot soup into bowls and garnish with fresh chopped parsley if desired; serve with crusty bread.

Notes

For a thicker soup, you can remove some of the liquid and thicken with a cornstarch slurry during the last hour of cooking. This soup tastes even better the next day as the flavors meld together.
