  • 1 tbsp olive oil optional, for sautéing
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 2 large carrots peeled and chopped
  • 2 celery stalks chopped
  • 2 medium potatoes peeled and diced
  • 1 zucchini chopped
  • 1 bell pepper any color, chopped
  • 1 cup green beans fresh or frozen
  • 1/2 cup corn fresh or frozen
  • 1 28 ounce can crushed tomatoes unsalted
  • 6 cups low-sodium vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 2 cups fresh spinach or kale
  • 1 tbsp fresh lemon juice optional
  • Fresh parsley or cilantro chopped (for garnish)

Cooking Steps

  • If desired, sauté the chopped onion and minced garlic in olive oil in a skillet over medium heat for 3-5 minutes until softened.
  • Combine all chopped vegetables (carrots, celery, potatoes, zucchini, bell pepper, green beans, corn), crushed tomatoes, broth, oregano, thyme, bay leaf, salt, and pepper in the crockpot. Add the sautéed aromatics if you prepared them.
  • Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until all vegetables are tender.
  • During the final 30 minutes of cooking, stir in the fresh spinach or kale until it wilts.
  • Remove the bay leaf, then taste and adjust seasonings as needed.
  • Stir in the fresh lemon juice, if using, to enhance the flavors.
  • Ladle the soup into bowls and garnish with fresh parsley or cilantro before serving.

Notes

For a richer flavor, don't skip sautéing the onion and garlic. You can also add other vegetables like mushrooms or sweet potatoes to customize the soup. This soup freezes well for future meals, just thaw and reheat. Adjust the cooking time based on your crockpot's performance and desired vegetable tenderness.
