  • 1.5 lbs boneless, skinless chicken breasts or thighs cut into 1-inch pieces
  • 2 cups baby carrots
  • 1.5 lbs small red potatoes quartered
  • 1 large onion roughly chopped
  • 2 stalks celery sliced
  • 1 cup green beans trimmed
  • 1 cup low-sodium chicken broth
  • 2 garlic minced
  • 1 tsp dried Italian seasoning
  • 0.5 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley for garnish, chopped

Preparation

  • Pat the chicken pieces dry with paper towels. Toss chicken with minced garlic, Italian seasoning, paprika, salt, and pepper until coated.
  • Place quartered potatoes, baby carrots, chopped onion, and sliced celery in the bottom of the slow cooker.
  • Arrange the seasoned chicken pieces evenly over the vegetables.
  • Pour the low-sodium chicken broth over the chicken and vegetables.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked and vegetables are tender.
  • For green beans with more bite, stir them in during the last 30-60 minutes on low, or 15-20 minutes on high.
  • Taste and adjust seasoning, then ladle into bowls and garnish with fresh parsley.

Notes

This recipe is easily adaptable! Feel free to add other root vegetables like parsnips or sweet potatoes. For a creamier dish, stir in 1/4 cup of heavy cream during the last 30 minutes of cooking.
