  • 1.5 lbs mixed vegetables chopped into bite-sized pieces (e.g., bell peppers, zucchini, broccoli florets, carrots, sweet potatoes)
  • 1/4 cup chicken or vegetable broth optional, for moisture
  • Fresh parsley chopped, for garnish (optional)

  • Preheat your oven to 400°F (200°C). In a large oven-safe skillet, heat the olive oil over medium-high heat, then sauté the chopped onion for 3-5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  • Add the ground turkey to the skillet, breaking it up and cooking until fully browned (5-7 minutes), then drain any excess fat. Stir in the Italian seasoning, smoked paprika, salt, and pepper.
  • Add all the chopped mixed vegetables and broth (if using) to the skillet, then toss everything thoroughly to coat with turkey drippings and seasonings.
  • Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the vegetables are tender-crisp and the turkey is cooked through.
  • Remove from the oven, garnish with fresh parsley if desired, and serve immediately.

Notes

For crispier vegetables, ensure they are spread in a single layer on the baking sheet. Feel free to customize the vegetables based on what's in season or your preferences.
