Ingredients
  

For the Beef:

  • 1 tablespoon olive oil
  • 1 pound lean ground beef (90% lean or higher)
  • small onion finely diced
  • 2 cloves garlic minced
  • 1 packet low-sodium taco seasoning OR homemade blend (or 2 tablespoons) (chili powder, cumin, paprika, oregano, salt, pepper)
  • 1/2 cup water or low-sodium beef broth
  • 1/2 cup diced tomatoes (canned, undrained, or fresh)

For the Base & Toppings:

  • 1-2 cups cooked brown rice, quinoa, or cauliflower rice (for a low-carb option)
  • 2 cups chopped romaine lettuce or mixed greens
  • 1 cup cherry tomatoes, halved, or 1 large tomato, diced
  • 1/2 cup canned black beans rinsed and drained
  • 1/2 cup corn (fresh, frozen, or canned)
  • 1/2 avocado diced

Instructions
 

Preparation

  • Cook your chosen base such as brown rice, quinoa, or cauliflower rice according to package directions or as desired.
  • Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion, cooking for 6-8 minutes until browned; drain excess fat.
  • Stir in minced garlic and cook for 1 minute until fragrant. Add taco seasoning, water (or beef broth), and diced tomatoes, then simmer for 5-7 minutes until liquid is absorbed and beef is seasoned.

Assembly

  • Divide the cooked base evenly among serving bowls.
  • Spoon a generous portion of seasoned ground beef over the base in each bowl.
  • Arrange chopped lettuce, diced tomatoes, black beans, corn, and diced avocado around the beef in each bowl.
  • Garnish with fresh cilantro, a squeeze of lime juice, and other desired toppings like sour cream or salsa, then serve immediately.

Notes

For extra heat, add a pinch of cayenne pepper with the taco seasoning. Store leftovers in an airtight container for up to 3 days. Customize toppings with your favorite vegetables or cheeses.
