  • 6 large eggs
  • 1/4 cup milk or cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter

Vegetables & Cheese

  • 1/4 cup chopped onion
  • 1/2 cup chopped bell peppers (any color)
  • 1/4 cup chopped fresh spinach
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 tablespoon chopped fresh chives or parsley

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.

Cooking

  • Heat olive oil or butter in an oven-safe 8-inch non-stick skillet over medium heat.
  • Add chopped onion and bell peppers to the skillet and sauté for 3-5 minutes until softened.
  • Stir in fresh spinach and cook for 1-2 minutes until it wilts.
  • Pour the egg mixture over the vegetables in the skillet.
  • Evenly sprinkle shredded cheese over the top of the egg mixture.
  • Cook on the stovetop for 3-5 minutes, allowing the edges to begin to set.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the frittata is set and lightly golden brown.
  • Remove from the oven and let cool for a few minutes before garnishing with fresh chives or parsley.

Serving

  • Slice and serve warm.

Notes

For extra flavor, consider adding a pinch of red pepper flakes with the vegetables. You can also experiment with different cheeses like Gruyère or feta. Store any leftover frittata in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
