  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and thinly sliced
  • 2 celery stalks, thinly sliced
  • 2 cloves garlic, minced
  • 8 cups chicken broth low sodium preferred
  • 2 cups cooked chicken, shredded or diced rotisserie chicken works wonderfully for convenience!
  • 1 bay leaf
  • ½ teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • 4 ounces egg noodles (medium)
  • ¼ cup fresh parsley, chopped for garnish

  • Heat olive oil in a large pot over medium heat, then sauté chopped onion, carrots, and celery for 5-7 minutes until softened.
  • Stir in minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  • Pour in chicken broth, add shredded chicken, bay leaf, and dried thyme; bring to a boil, then simmer covered for 15-20 minutes to meld flavors.
  • Increase heat to medium-high, bring soup back to a boil, then add egg noodles and cook for 7-10 minutes or until al dente.
  • Remove bay leaf, season with salt and pepper to taste, then ladle into bowls and garnish with fresh parsley.

Notes

For extra flavor, consider roasting your chicken bones to make a homemade chicken broth instead of store-bought. You can also add other vegetables like peas or corn during the last few minutes of cooking for added nutrients and color.
