Instructions
Heat oil in a large pot and cook chopped onion until softened, about 5 minutes.
Add minced garlic, chopped carrots, and celery; cook for 5-7 minutes until tender.
Stir in lentils, broth, diced tomatoes, oregano, and cumin. Bring to a boil.
Reduce heat, cover, and simmer for 25-30 minutes until lentils are tender, stirring occasionally.
Season with salt and pepper to taste.
Stir in chopped greens and cook for 3-5 minutes until wilted.
Ladle into bowls and serve with optional lemon juice or yogurt.
Notes
This stew is even better the next day as the flavors meld. Feel free to use other vegetables like zucchini or bell peppers.
