  • 1 tbsp cooking oil vegetable or olive
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 cup dried brown or green lentils rinsed
  • 4 cups vegetable broth or water with 2 bouillon cubes
  • 1 can diced tomatoes undrained
  • 1 tsp dried oregano
  • 0.5 tsp ground cumin
  • Salt and black pepper to taste
  • 2 cups chopped seasonal greens spinach or kale recommended
  • lemon juice optional: a squeeze of lemon juice or a dollop of plain yogurt for serving

Instructions

  • Heat oil in a large pot and cook chopped onion until softened, about 5 minutes.
  • Add minced garlic, chopped carrots, and celery; cook for 5-7 minutes until tender.
  • Stir in lentils, broth, diced tomatoes, oregano, and cumin. Bring to a boil.
  • Reduce heat, cover, and simmer for 25-30 minutes until lentils are tender, stirring occasionally.
  • Season with salt and pepper to taste.
  • Stir in chopped greens and cook for 3-5 minutes until wilted.
  • Ladle into bowls and serve with optional lemon juice or yogurt.

Notes

This stew is even better the next day as the flavors meld. Feel free to use other vegetables like zucchini or bell peppers.
